In general, the transformation of Vegas from being a place famed for $1.99 buffets 20 years ago, to now being one of the very best places in the world for dining, is just amazing. Most of the big hotels have outstanding restaurants if you have the money, but more impressive and more practical for most of us is that you can get very good meals without maxxing out your credit cards: Grand Luxe Cafe at Venetian and Palazzo, the Noodle Bar at the Venetian, and even the excellent (if time warped) steak house at Circus Circus are all excellent places to eat at a tolerable cost.
